The soils in the region of Schloss Vipava in Slovenia play a crucial role in the wine production. The clay soils of these sun-drenched hills provide optimal conditions for grapevine cultivation. The diversity in soil composition and the Mediterranean influence result in wines with unique minerality and a strong sense of terroir. Pinela is an indigenous Vipava variety that primarily grows on the slopes of the upper part of the Vipava Valley. It does not tolerate high humidity well and prefers to grow weakly, making it suited to poor, marl-rich soils and sun-exposed sites, where it has already been planted by our Nonots. Due to its late ripening and lower sugar content, it is exclusively hand-harvested in mid-September. The grapes were cold macerated for 10 hours and then lightly pressed. The spontaneous fermentation, with partial wild fermentation, took place in stainless steel tanks, and the wine was aged on its lees for six months.
