The soil in South Styria often consists of a type called Opok. Opok is a marly, calcareous, sedimentary rock formation. This soil type is particularly suitable for viticulture because it provides good drainage. Some vineyards may also have gravel soils, which also promote good water permeability.
Generally, Merlot tends to produce wines with a medium to full body and a soft texture. Aromas can vary depending on the terroir and winemaking process, but commonly include notes of chocolate, vanilla, and spices.
Many vineyards in South Styria are located on steep slopes. These slopes allow for optimal sunlight exposure and provide good drainage for rainwater. Due to the hilly topography, some vineyards are terraced to mitigate the slope gradient.
