The "Les Gâts" single vineyard is situated on mineral-rich soils composed mainly of schist, sandstone, and volcanic rock. These soils play a crucial role in the wine’s structure and complexity, promoting the development of intense aromas and pronounced minerality. The region’s microclimate, characterized by cool nights and warm days, allows for slow ripening of the grapes, resulting in high concentration and precision in the wine.
The Anjou Blanc "Les Gâts" 2017 displays a bright golden-yellow color with brilliant reflections. On the palate, the wine is full-bodied, with an impressive balance between fruit, acidity, and minerality. The vibrant acidity and well-integrated fruitiness make this wine particularly accessible, while the pronounced minerality and structure ensure long aging potential. Patrick Baudouin farms his vineyards according to biodynamic principles to preserve the quality of the grapes and the health of the soil. The grapes are hand-harvested, and the wine is traditionally vinified with gentle pressing and slow fermentation to retain the wine’s aromatic complexity and structure. After fermentation, the wine ages on fine lees, adding depth and a creamy texture.
