Methode ancestrale – the most natural way to produce sparkling wine. In this process, the grape must is bottled during fermentation without filtration. The fermentation continues in the bottle, naturally creating carbon dioxide. The deposited yeast is removed, but a slight cloudiness remains. No sulfur is added. This sparkling wine stands out with its fine bubbles, subtle notes of stone fruits, a beautiful acidity, and is bone-dry (Brut Nature).
